Saisons and farmhouse ales historically were brewed in the off months on the farms in Belgium, then stored for drinking during the hot summer months by the workers. Chateaux has the characteristic spicy notes from the use of Saaz hops and the Saison yeast strains that we have chosen. We also add in a little coriander and Sorachi ace hops to give it just a hint of citrus to make this saison truly refreshing and one of a kind on a hot summer day. Extract version is made with DME and steeping grains. Steeping grains are packed in a muslin grain bag perfect for steeping. 5 1/2 gallon recipe.
Choose Belle Saison Dry Yeast or Wyeast 3711 French Saison for the liquid yeast option.
All grain recipe is based on a 5 1/2 gallon recipe at 70% efficiency.
Both recipes come with detailed instructions which may or may not need adjusting to you own brewing style. Both recipes end up right at 6.8 ABV.
